I saw a conversation on Facebook earlier today that caught my attention, one that included the phrases, "I hope dinner is as good as it smells!" and "OMGGGGGGGGG
This chicken is to die for!", along with a recommendation that I personally should try it!
That was more than enough of a recommendation - I knew then and there that I was going to cook it tonight. It would be too late for dinner tonight, but would be a great lunch tomorrow.
I've had only a couple of bites, but she wasn't kidding!!! In addition to how delicious it is, prep time is like a minute!!
Amy B. found the recipe on Pinterest (I love Pinterest!). It's originally from food.com.
I made a slight alteration from the original recipe. I used only 4 oz. of cream cheese, and it was the lower fat Neufchatel cheese.
Here is this gem of a recipe!
Crock Pot Chicken with Black Beans and Cream Cheese
4 -5 boneless chicken breasts
1 (15 1/2 ounce) can black beans
1 (15 ounce) can corn
1 (15 ounce) jar salsa, any kind
1 (8 ounce) package cream cheese
1 Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.
2 Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.
3 Keep in crock pot on high for about 4-5 hours or until chicken is cooked.
4 Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.
5 All done and enjoy!

Pot Roast in the crock pot
Couldn't tell you the last time I cooked a pot roast. Possibly two years ago, or more. I've had a craving the past couple days, so I threw one in the crock pot this morning. MMMMMMMM! I love coming home to a house that smells like I've been slaving over the hot stove all day!!!

EASY CROCK POT ROAST
3 lb. chuck roast
1/2 can beef broth
1 c. flour
1/2 tsp. garlic powder
1 or 2 cloves garlic
1 medium onion, diced
2 tbsp. olive oil
1 bay leaf
dash of salt and pepper
Wash chuck roast. Season generously with salt, pepper and garlic powder. Coat with flour.
Place floured roast into oiled skillet and brown lightly on both sides.
While browning roast, add diced onions to skillet.
Transfer roast and onions to greased crock-pot. Toss in whole garlic cloves and bay leaf.
Pour in 1/2 can beef broth over roast and add salt and pepper.
Cover and cook on low for 8 to 10 hours.

Easy Meatballs Stroganoff / Family reunion
So this past weekend was our annual family reunion. I don't go often, in fact in the past 10 years, this is probably only the 3rd or 4th one I've been too. It was really good to see everyone, but sad when you look around, and see that Aunt so and so, or Uncle so and so, isn't there. This past year I lost at least one aunt and one uncle, and even though I don't often go, their absenses were very much noticed.
And then there are all the "new" people. Young adults getting married and bringing their new spouses. I had to ask a few times, who is that? And little kids growing up - oh my. It's been almost 8 years since my great-neice Caitlyn was born. Holy cow. Time flies!!
Food is always abundant at my family reunions. My family has a lot of fantastic cooks! I never seem to know what to take. I love making potato salad, but so does everyone else. I get tired of making the same 7 layer salad for every get together (although it's really good!). So I made this simple meatball stroganoff. When it was time to go, all that was left on the bottom of the crock pot was about 1/2 cup of the sauce mixture.
Easy Meatballs Stroganoff
2 bags purchased frozen regular beef meatballs
2 cans Campbells Cream of Mushroom soup
1 cup sour cream
1 cup milk
Add all ingredients to crock pot. Stir to combine. Set crock pot on high and cook for 2 1/2 hours.
Can also be served over egg noodles or rice.

Green Split Pea Soup
1/2 lb. dry green split peas
4 cups water
1 ham hock or meaty ham bone
1 bay leaf
1/3 cup chopped onion
1/3 cup chopped celery
1/3 cup chopped carrots
1/2 t. salt
1 clove garlic, minced
1 packet GOYA seasoning without Annatto (Sazon Goya sin Achiote)
Combine all ingredients in crock pot. Cook on low for 8 to 10 hours.
Serve with DUMPLINGS (seperate recipe)
Original recipe was from the back of the bag, but was for the stove top. The Goya seasoning was an addition much later, after I purchased a bag of the Goya peas, and it was included in their recipe. Very tasty addition.

1 1/2 cups flour
2 t. baking powder
3/4 t. salt
3/4 cup milk
Cut shortening into flour, baking powder and salt until mixture resembles fine crumbs. Stir in milk. Drop dough by spoonfuls onto hot meat or vegetables in boiling stew (do not drop directly into liquid). Cook uncovered 10 minutes. Cover and cook about 10 minutes longer.
CROCKPOT PEA SOUP INSTRUCTIONS: Cook covered during the last 35 to 40 minutes of the soup's cooking time.

America's Favorite Pot Roast
from big packet of crock pot recipes that was e-mailed to me by a spark member
3 1/2 lbs. sirloin tip roast, trimmed
1/4 cup flour
2 t salt
1/8 t pepper
3 carrots, peeled and sliced
3 potatoes, peeled and quartered
2 small onions, sliced
2 stalk celery, cut into 2" pieces
1 2 oz. jar mushrooms, drained
3 T flour
1/4 cup water
Trim all excess fat from roast; brown and drain if using chuck or another highly marbled cut. Combine 1/4 cup flour, the salt and pepper. Coat meat with the flour mixture.
Place all vegetables except mushrooms in Crock-Pot and top with roast (cut roast in half, if necessary, to fit easily). Spread mushrooms evenly over top of roast. Cover and cook on Low for 10 to 12 hours.
If desired, turn to High during last hour to soften vegetables and make a gravy. To thicken gravy, make a smooth paste of the 3 tablespoons flour and the water and stir into Crock-Pot. Season to taste before serving.
Serves 4 to 6

30 whole cloves
3 cups apple juice, or as needed
1 cup brown sugar
1 cup maple syrup
2 tablespoons ground cinnamon
1 tablespoon ground nutmeg
2 tablespoons ground cloves
1 tablespoon vanilla extract
1 orange's peel, grated
Press whole cloves into the ham so they are evenly distributed. You may score the ham for easier insertion if you wish. Place the ham in a slow cooker. Pour in apple juice until only about 2 inches of ham is above the surface. Pack the brown sugar on top of the ham, pressing into the cloves. This will get washed away in the next step but any that stays on the ham is a bonus.
Pour the maple syrup over the ham. Season the apple cider with cinnamon, nutmeg, ground cloves and vanilla. Add the orange peel to the pot. Fill the slow cooker as full as you can with apple cider without going over the fill line. Cover and set to low. Cook for 8 to 10 hours.
